Product description

Incredible power, 51 year old vines, autochthonous, typical notes of peach, apricot. Orange wine. Wine for expert sommelier.

Visual appearance: intense golden yellow, natural colour obtained of long maceration.

Olfactory and gustative features: the wine has a continuous evolution, complex fruity and floral bouquet, tipical of Malvasia Istriana, aromatic with notes of peach, apricot, plum, acacia honey etc. Soft, creamy, savory and mineral taste, wine with a strong character, full-bodied with an incredible persistence.

Vinification: The grapes are harvested and sorted by hand, then gently destemmed and macerated on the skins for 14 days in conical oak vats without temperature control. During these days, alcoholic fermentation begins. Moreover, three times a day manual punching-down is carried out.

Ageing: The skins are then softly pressed and the wine is then placed in large oak barrels for two years, always in contact with the yeasts until bottling. Finally, the wine ages in bottles for at least 6 months.

Pairing with food: perfect as an aperitif, ideal for fried fish dishes, stocafisso, lobster, grilled white meats, risotto with truffles, polenta, aged cheeses, gorgonzola etc.
